Diwali preparation of the day – Karanji

Being a Mumbai girl I have to make Karanjis or Karinjas for Diwali. Another home speciality. Without these babies, a Mumbaiya Diwali platter is incomplete. I am not overly fond of them, but it is one of those pastries I HAVE to make.

I made this recipe in a typical Maharashtrian style taking inspiration from this post for the cover. But the stuffing is my mom’s recipe. A simple mixture of desiccated coconut, powdered sugar, roasted poppy seeds, roasted semolina, cardamom powder and nuts.
I loved shooting while making these dumplings. There was some wonderful window light entering the kitchen which is rare during this time of the year in Seattle. So my smiley self was listening to Rahet Fateh Ali Khan, shooting and cooking. Blissful sunday!
